There’s a lot to be said about resisting the urge to be original, or put some kind of spin on something, and just make the damn thing great without trying to be cute about it.

What we do here is just make the thing wicked good and keep pushing it towards great, problem solve our way through sandwiches, always trying to fix the things that could be better and leaving the unbroken things the way they are.

Sometimes it’s about honing traditional techniques; other times it’s about searching for new methods, information or technology, but here, in our case, it’s always got to be in pursuit of making something massively familiar, and relatable, just better than you’re used to.

We’re a process oriented sandwich shop, if I had to pin down what we do without being self conscious about how it sounds. That’s why we bump music, make fun of you for being afraid of mayonnaise and onions, have the place covered in wheatpastes and stickers and generally give off that you’re hanging out in a prep kitchen vibe; it takes the edge off, makes the whole idea of a bunch of people obsessing over perfectly toasted bread or gluing chicken thighs into bricks easier to swallow, not seem so ridiculous, it gets the riff raff through the doors.

It can seem pretentious to talk and think about sandwiches the same way you’re used to fine dining establishments presenting their food and processes. It shouldn’t, but for some reason we reserve the concept of meticulous execution for high end joints.

Pizza is the breakthrough common food where the obsessively compulsive attention to detail and process of high end restaurants has leapt into the realm of obtainability for everyday people. We look forward to sandwiches having their moment.
